Fried Egg Tacos with Chile Jam

Full disclosure: I'm not really a brunch person. Combo of the long lines and paying $16 for eggs. This rule isn't steadfast. I will always, always break for pancakes. The Ricotta Pancakes with Roasted Blueberries at Saraghina in Brooklyn are far better than any I could make that I'll happily brave the crowds and mimosas to secure a plate of them.

What I love is breakfast at home. Staying in my pajamas, making some eggs and taking it easy. These breakfast tacos I spied in Bon Appétit are the jam. Sunny side up eggs, plain yogurt, corn tortillas. There's labneh here because I had it for another recipe. If you can't find that, Greek yogurt is fine. I've even subbed in some crème fraîche to happy results. All that's left is whipping up the Chile Jam, a quick mix of sambal-oelek rice vinegar and honey, and try not to douse  the whole thing with said jam. IMHO it's less a jam than a very nice hot sauce. You'll want to put it on everything. Fish, grilled chicken, that packet of fancy crackers you bought for a NYE party that are definitely stale but you hate to let anything go to waste...

Serve it on warm tortillas with a strong cup of coffee. BOOM. Now if only I had some Thank You Kitchen Salsa to go with it!
